Extreme Fix, Extreme Results!

My BEST advice for someone struggling to get their workouts in is to find a couple of friends who want to do it with you! I have about 4 friends who I always text my weekly workout schedule to because I know that I'm 100% more excited to workout when I know I won't be doing it alone. Plus if my friends are knocking on the door, I'm not going to hide in the closet and say I don't feel like working out today.
We have cleared out our garage to make a workout space and we just follow along with the Beachbody workouts together! One a good day, everyone will make it, but usually I have at least ONE person show up!

On this particular day, my friends didn't show up (waaah!) BUT I pushed through my workout alone and I'm feeling super strong! I have the kinda body type that doesn't like to put on muscle (my nickname in grade school was chicken legs, lol!) But I've upped my protein and healthy fats, sticking to this fitness program, using heavier weights and finally seeing changes. I can't even say enough how much I'm loving this Extreme Fix program! I've completed the first 21 Day Fix program and re-done it a few times because I love the variety and the trainer really inspires me. I was super excited when they came out with an Extreme version of the program!!

Autumn says, "Don't let anyone tell you that you can't change any part of your body... yes, you can, you just have to do the work but you will see results. Stuffed Bell Peppers!

These are one of my favorite meals! I am a pretty picky eater so I was nervous at first, but it is truly one of the yummiest things I've ever eaten! Here's how to make them!

STUFFED BELL PEPPERS:
Recipe makes 4 portions!
247 Calories, 7 g fat, 35 g carbs, 8 g fiber.

Ingredients:
2 large red bell peppers
sea salt (to taste)
1 tsp. olive oil
1/2 yellow onion, diced
1 clove garlic, minced
1 cup water
8 oz. organic tempeh, crumbled
7.5 oz (1.2 can) fire-roasted diced tomatoes
2 Tbsp. raw pine nuts
1 cup cooked brown rice
1 Tbsp. Freshly chopped parsley
1 Tbsp. freshly chopped basil
1 Tbsp. raisins (I prefer golden!)

1. preheat oven to 375 degrees
2. Halve peppers lengthwise, leaving stems intact. Scoop out seeds & place cut side up in a shallow baking dish. Sprinkle with salt & pepper. Bake for about 15 minutes, or until they're soft, but still retain their shape
3.Put 1 cup of water on to boil in kettle or small pan.
4. While peppers are baking and water is boiling, heat olive oil in large skillet over medium heat and saute onion & garlic until soft.
5. Add tempeh, tomatoes, and pine nuts to skillet and saute about 5-7 minutes.
6. Stir in rice, parsley, basil, and raisins. Remove from heat & season with a bit more salt & pepper.
7. Spoon mixture into peppers in the baking pan. Pour just enough boiling water around peppers to touch the base of each so they won't burn in the oven.
8. Bake for 15 minutes & ENJOY!!

I don't like to admit this but I frequently fall into an idle, excuses, borderline depression mode when I am not on track fitness-wise. So I admit...
I've been a little off-track lately, and I'm not going to let my default mode find me victim to my sweet tooth & all these Halloween temptations this Fall! I LOVE setting goals for myself and having a balance in my days. I also love to help others get a plan and find so much joy in helping them reach their goals! Let's FOCUS on finding the BEST of ourselves!

21 Day Fitness & Nutrition Challenge!


I don't know about you, but it takes me a long time to create a habit, and truly KEEP it. My day is jam-packed with good things- taking the kids to school, tidying up the house, preschool projects with my 2 year old, blogging, posting, picking up the kids, homework time, free-play while I prep dinner, make dinner, recover from dinner, baths/showers, reading time, bedtime and do it all again tomorrow!! I mean, that's a lot of things that I do for OTHERS, but I haven't had much ME time. I used to think that taking time for myself was selfish. Now I know that when I take the time for myself, I have MORE to give to others.

Sneak Peek- 21 Day Fix Meal Plan!

One of my VERY favorite fitness programs is 21 Day Fix! I love it because the workouts are only 30 minutes long & there's tons of variety in the exercises- from lower body, upper body, cardio, cardio with weights, total body, yoga, pilates & plyo. The other thing I LOVE about this program is the nutrition plan. Instead of counting calories, you get these color coded containers that teach all about portion control & how to eat a balanced diet. I learned so much from following this plan. I was shocked that I was NEVER hungry! But I also never had that full feeling when you walk away from the table and wish you had a few less bites.
Here's a little sneak peek at how the meal plan works.... each color container represents a different food group. Purple= Fruit (Grapes) Red= Protein (Turkey Burger Patty) Yellow= Grain (Bun- MultiGrain sandwich thins). 

The size of the box teaches you how MUCH food to eat. Then depending on your weight & goals you'll get so many of each container per day.

This program teaches not only WHAT foods to eat to fuel your body but HOW much of it, because even good foods can be over eaten. In my experience though, what I LOVE about this program is that I have to make a conscious effort to eat enough.
